Dhaba style dum Aloo


Baby potato- 200g

onion- 2 large

tomato- 3 medium

Ginger and paste- 2 tsp

bay leaf- 1

clove- 3

green cardaomom- 2

black cardamom- 1

garam masala powder- 1/2 tsp

Kashmiri red chilli- 1 tsp

salt- to taste


  • wash and peel baby  potato. puncher the potato with fork
  • Boil the baby potato with turmeric and salt. boil till 80% done.
  • Heat mustard oil in a pan and deep fry potato till golden colour.

  • Heat mustard oil in a separate pan add jeera, whole garam masala, chopped garlic, chopped green chilli and slice onion. cook till onion get golden brown.
  • Add ginger and garlic paste. mix it well and then add chopped tomato.
  • Then add kashmiri red chilli powder. cook till oil float on the surface 
  • now keep it aside to lower down its temperature.
  • Then grind it to make a paste.
  • Again heat mustard oil in a pan add jeera, ginger and paste, turmeric powder, kashmiri red chilli powder and garam masala powder. Then add tomato and onion paste and add little water .
  • cook till oil float on the surface.
  • Now add baby potato and cook it on low flame for 10 mins.

  • Add some coriander leaves. switched off the flame.
  • garnished with cream and green chilli
  • serve hot with luchi(maida ki  puri) or lacha paratha.

MURG KOLAPURI

Chicken- 500g onion- 1 large curd- 1 tbsp ginger and garlic paste- 1.5tbsp kashmiri red chilli - 2 tsp cinnamon stick- 1 icnch green cardamom-4 clove- 4 black pepper- 4-5 coconut-1/4 cup tomato- 2 medium green chilli -2 kasoori methi- 1tsp broil the whole spices with coconut and make a powder (kolapuri masala) In a pan add oil saute green chilli, garlic and onion and make a puree. marinate chicken with kolapuri masala, kashmiri red chilli powder, salt, curd and onion puree. keep aside for 30 min heat oil in a pan add tomato and sprinkle salt. cook it properly. add kashmiri red chilli powder and cook for 2 min. Add chicken with its marinade and cook on slow flame add kasoori methi add coriander leaves. check seasoning murg kolapuri is ready to serve

Moong Dal ki Puran Poli

  For filling moong dal - 1 cuo sugar- 1 cup cardamom powder- 1 tsp nutmeg powder- 1/2 tsp ghee-1 tbsp For dough whole wheat flour- 2 cup salt- to taste water- to knead a dough oil- 1 tbsp soak moong dal for 2hrs Make a soft dough with whole wheat flour, salt, water and oil. Keep aside for 20 mins. boil moong dal till it becomes soft. Heat ghee in a pan and add moong dal. cook till dal become semi dry. cool it completley and grind moong dal with sugar, cardamom powder and nutmeg powder. puran puli filling is ready. make a small ball of dough and stuff this filling. make a small peda and make a parantha. heat tawa and cook parantha by applying ghee on it  serve hot with kadhi.
