Malai Kofta


For kofta ball
paneer-250g
potato- 3 medium
cornflour-to roll
salt- to taste
khoya- 50g
green cardamom powder-1/3 tsp

For Gravy
onion- 1 medium
tomato- 2 medium
ginger and garlic paste- 1 tbsp
cashewnut-15-17
Milk- 1/2 cup
cream- 2 tbsp
cardamom powder-1/4 tsp
garam masala- 1tsp

For kofta balls
  • Grate the paneer in a bowl and add salt, khoya, grated potato and cardamom powder.
  • Make a proper dough with the above ingredients.
  • Make a small balls of kofta and coat with cornflour
  • Deep fry the kofta till light golden brown.
For gravy
  • Cut onion into thin slices. 
  • Heat ghee in a pan add  slice onion. cook till translucent. Then add cashewnut and chopped tomato. cook well.
  • Grind the the above mixture and make a fine paste
  • Heat ghee in a pan add ginger & garlic paste. then add turmeric powder, kadhmiri red chilli powder and garam masala. 
  • Now add the onion, cashewnut and tomato paste and then add milk. cook well
  • Adjust the seasoning.
  • Add cardaomom powder and mix it well
  • finish it by adding fresh cream and stich off the flame.
  • Palce kofta in a bowl and pour hot gravy on top and serve hot.



कोफ्ता की गेंद के लिए
पनीर-250g
आलू- 3 मध्यम
कॉर्नफ्लोर-टू रोल
नमक स्वादअनुसार
खोआ- 50 ग्रा
हरी इलायची पाउडर -1 / 3 चम्मच

ग्रेवी के लिए
प्याज- 1 मध्यम
टमाटर- 2 मध्यम
अदरक और लहसुन का पेस्ट- 1 बड़ा चम्मच
काजू-15-17
क्रीम- 2 बड़े चम्मच
इलायची पाउडर -1 / 4 चम्मच
गरम मसाला- 1tsp

कोफ्ता गेंदों के लिए
  • पनीर को एक कटोरे में निकालें और नमक, खोआ, कसा हुआ आलू और इलायची पाउडर डालें।
  • उपरोक्त सामग्री के साथ एक उचित आटा बनाओ।
  • कोफ्ता और कॉर्नफ्लोर के साथ एक छोटी बॉल बनाएं
  • कोफ्ते को हल्का सुनहरा भूरा होने तक तलें।
ग्रेवी के लिए
  • प्याज को पतले स्लाइस में काटें।
  • एक पैन में घी गरम करें उसमें प्‍याज डालें। पारदर्शी होने तक पकाएं। फिर काजू और कटे टमाटर डालें। अच्छी तरह से पकाओ।
  • उपरोक्त मिश्रण को पीसकर पेस्ट बना लें
  • एक पैन में घी गरम करें और उसमें अदरक और लहसुन का पेस्ट डालें। फिर हल्दी पाउडर, कश्मीरी लाल मिर्च पाउडर और गरम मसाला डालें।
  • अब प्याज, काजू और टमाटर का पेस्ट डालें और फिर दूध डालें। अच्छी तरह से पकाओ
  • इलायची पाउडर डालकर अच्छी तरह मिलाएँ
  • ताजा क्रीम डालकर खत्म करें और आंच से उतार दें।
  • एक कटोरे में कोफ्ता तलें और ऊपर से गरमा-गरम ग्रेवी डालें और गर्मागर्म सर्व करें।

MURG KOLAPURI

Chicken- 500g onion- 1 large curd- 1 tbsp ginger and garlic paste- 1.5tbsp kashmiri red chilli - 2 tsp cinnamon stick- 1 icnch green cardamom-4 clove- 4 black pepper- 4-5 coconut-1/4 cup tomato- 2 medium green chilli -2 kasoori methi- 1tsp broil the whole spices with coconut and make a powder (kolapuri masala) In a pan add oil saute green chilli, garlic and onion and make a puree. marinate chicken with kolapuri masala, kashmiri red chilli powder, salt, curd and onion puree. keep aside for 30 min heat oil in a pan add tomato and sprinkle salt. cook it properly. add kashmiri red chilli powder and cook for 2 min. Add chicken with its marinade and cook on slow flame add kasoori methi add coriander leaves. check seasoning murg kolapuri is ready to serve

Moong Dal ki Puran Poli

  For filling moong dal - 1 cuo sugar- 1 cup cardamom powder- 1 tsp nutmeg powder- 1/2 tsp ghee-1 tbsp For dough whole wheat flour- 2 cup salt- to taste water- to knead a dough oil- 1 tbsp soak moong dal for 2hrs Make a soft dough with whole wheat flour, salt, water and oil. Keep aside for 20 mins. boil moong dal till it becomes soft. Heat ghee in a pan and add moong dal. cook till dal become semi dry. cool it completley and grind moong dal with sugar, cardamom powder and nutmeg powder. puran puli filling is ready. make a small ball of dough and stuff this filling. make a small peda and make a parantha. heat tawa and cook parantha by applying ghee on it  serve hot with kadhi.
