Shahi Kofta

 For kofta balls
paneer- 100g
cornflour- to coat
salt- tt
khoya- 1 sp
green cardomom powder-1/4 tsp
cashewnut - 8
raisin 10-12

For gravy
onion- 2
bay leaf-1
green cardamom- 1/4 tsp
ginger and garlic paste
cashewnut- 1/3 cup
melon seed- 1/3 cup
milk- 1/2 cup
fresh cream- 1 cup
kasoori methi
salt- tt
green chilli- 1-2 finely chopped


for kofta balls
  • Grate paneer in a bowl and add salt, khoya green cardamom powder
  • Make a proper dough with the above ingredients.
  • Make small ball of kofta and coat with cornflour
  • Deep fry the kofta (colour should remain white)

For Gravy
  • Boil onion, cashewnut and melon seed all together and make a fine paste
  • heat ghee in a pan add bay leaf, green cardamom, green chilli and ginger & garlic paste.
  • Now add white pepper and garam masala
  • Thereafter add the cashewnut and onion paste and milk in a gravy
  • cook till fat float on the surface
  • check seasoning
  • finish it with cream, green cardaomom powder and kasoori methi
  • while serving pour gravy in the kofta balls

पनीर- 100 ग्रा
कॉर्नफ्लोर- को कोट करना
नमक स्वादअनुसार
खोआ- 1tsp
हरी इलायची पाउडर -1 / 4 चम्मच
काजू - 8
किशमिश 10-12

ग्रेवी के लिए
प्याज- २
बे पत्ती -1
हरी इलायची- १/४ टी स्पून
अदरक और लहसुन का पेस्ट- 1 छोटा चम्मच
काजू- 1/3 कप
तरबूज के बीज- 1/3 कप
दूध- 1/2 कप
ताजा क्रीम- 1 कप
कसूरी मेथी
नमक स्वादअनुसार
हरी मिर्च- 1-2 बारीक कटी हुई

कोफ्ता गेंदों के लिए
  • एक कटोरे में पनीर को पीस लें और नमक, खोआ हरी इलायची पाउडर डालें
  • उपरोक्त सामग्री के साथ एक उचित आटा बनाओ।
  • कोफ्ते की छोटी बॉल बना लें। कॉर्नफ्लोर के साथ कोट
  • कोफ्ते को डीप फ्राई करें (रंग सफेद रहना चाहिए)

ग्रेवी के लिए
  • प्याज, काजू और खरबूजे के बीज को एक साथ उबालें और पेस्ट बना लें
  • कड़ाही में घी गरम करें, तेज पत्ता, हरी इलायची, हरी मिर्च और अदरक और लहसुन का पेस्ट डालें।
  • अब इसमें सफेद मिर्च और गरम मसाला मिलाएं
  • इसके बाद एक ग्रेवी में काजू और प्याज का पेस्ट और दूध डालें
  • सतह पर वसा तैरने तक पकाना
  • इसे क्रीम, हरी इलायची पाउडर और कसूरी मेथी के साथ खत्म करें
  • कोफ्ता बॉल्स में ग्रेवी डाले

Butter Chicken or Makhni chooze was introduced in 1947 by the founder of Moti Mahal Restaurant. This dish was made 'by chance' by  mixing leftover chicken with tomato gravy rich in butter and cream.
