NALLI NIHARI

Lamb shank/ Beef shank- 1 kg Ginger and garlic paste- 2 tbsp Mustard oil Onion- 3 Nihari masala- 2.5 tbsp Turmeric powder- 1/2 tsp Kashmiri red chilli powder - 1.5 tsp Rose water - 1 tbsp Kewda water- 1 tbsp Whole wheat flour- 2 tbsp Salt  * Make a stock with Nalli. And keep aside * Heat mustand oil in a kadai add slice onion. Cook till golden brown. * Then add ginger and garlic paste  and cook till oil fload on the surface then add turmeric  powder. Cook for 2mins. * Now add meat in a kadai. Cook little bit. * In a bowl mix nihari masala,  kashmiri red, salt, chilli powder and water then add it in a kadai. * Cook till spices coat the surface of meat. Whole chicken-1 no.(best 1200g) Bone less leg tikka- 250g Minced chicken- 100g Cashewnut- 100g Almond- 100g Raisin- 20g Onion - 6 medium size Tomato- 2medium size Poppy seed - 50g Egg- 10no. GALAUTI KEBAB

Meat- 500g Raw papaya paste- 3 tbsp Onion- 1 medium Cashewnut- 15-20 Garlic chopped- 1 tbsp Ginger chopped- 1 ybsp Green chilli chopped- 1 tbsp Corriander powder- 1 tsp Kashmiri red chilli powder- 1 tsp Cumin powder- 2 tsp Garam masala-1tsp Corriander leaves - a handful  * Cut onion into slice and deep fry it till golden brown. * fry cashewnut till light golden brown. * Grind the brown onion, ginger chopped, garlic chopped, green chilli chopped, brown cashewnut, corriander powder, cumin powder, garam masala, kashmiri red chilli and corriander leaves powder all toghether and mix it with the minced meat. *  Add raw papaya paste and salt. APPLE RABDI

Milk- 1lite Apple- 3 Cardamom powder- 1/4 tsp Sugar- 4tbsp Almond- 8-10 Pistachio- 8-10 Ghee- 2tbsp * Grate the apple. * Pour milk in a vessel and bring it to boil and then simmer it till it reduce to half.  * Add sugar, cardamom  powder and cook in a low flame.  * Heat ghee in a pan and add grated apple. Cook till  it become little dry. * Add apple in a rubdly and cook for 3-4 min. * Rabdly is ready. KHAS KHAS BADAM HALWA

Poppy seeds-50g Almond- 10g Cashewnut- 10g Raisin- 5g Pistachio- 10g Milk- 200ml Green Cardamom powder- 1/4 tsp Ghee-2 tbsp * Soak almond and poppy seeds overnight * Peel the almond. * Grind and make a paste of almond and poppy seed. * Heat ghee in a pan and add khas khas paste. paneer chilli

Paneer- 250g Cornflour- 3tbsp Salt- to taste Ginger chopped- 1tbsp Garlic chopped- 1tbsp Celery- 1tbsp Capsicum- 1 small Onion- 1 medium Green chilli- 2 piece  Rrd chilli- 2 piece Soy sauce- 1tbsp Red chilli sauce- 1tbsp Sweet and sour sauce sugar- 1tsp * Cut paneer into cube. * Coat paneer with corn starch, salt and water. * Deep fry the paneer till light golden brown and keep aside. * Heat oil in a wok ( chinese kadai) add green, chilli, red chilli, chopped garlic and chopped giner saute for 2mins * Then add celery, onion cubes and capsicum cubes. Saute toll onion get fragrant * Put soya sauce, red chilli sauce, sweet and sour sauce. Toss onion and capsicum. * Add some water and cornflour slurry, to thicken the sauce. * Add fried paneer cubes and spring onion. Garnish with spring onions.

Lauki musallam

Bottle guard - 500g Khoya-1/2 cup Cashenut-1/2 cup Raisin-1/4 cup Almond-1/2 cup Amul processed cheese-1/2 cup Green chilli -2 no Green peas- 1/2 cup Boiled potato1cup Onion- 3 medium Tomato- 2medium Poppy seed- 1/2 cup Turmeric powder-1/2 tsp Kashmiri red  chilli powder-1tsp Ginger and garlic paste- 1tbsp *  Soak almond and poppy seed overnight  separately  * Cut lauki into 2 pieces  and remove the stem. * Remove the centre part of the lauki. * Take water in a deep bottom pot add turmeric, salt and lauki. Cook till 70%  * Peel the almonds. For stuffing * Mash potato in a bowl add green chilli, green peas, khoya, salt, chopped cashewnut, chopped almond, raisin, corriander leaves  and amul processed cheese.
